It sounds like you already know this but just to be sure. You can edit the sidebar content to hold whatever you would like. It can have of course a tag cloud, recent posts, blog roll, links, or any plugin that you might want to display. In WordPress 2.7 you can edit the sidebar in the Appearance tab and then select Widgets. You might already know about this and truly mean you want a theme with no sidebars at all.
I am pretty sure Semi Logic theme should be able to do this. They have both a paid for version and a free version but you are allowed to set the sidebar options even in the free theme.

You can always easily create a theme. Take just a few minutes.

Question by Confused: Is there a way to edit the theme of WordPress without admin access?
We are in charge of a few pages of our website and were given our own username and password. However, I don’t see the templates section on the administration panel. Is there a way to override the default theme (I’m assuming it’s editing the html code) for our few pages?

Nope.
You need to request for higher priviledge in order to edit the theme.
The theme editor address should be like this:

The only way I know of, other than setting up wamp on my local machine, is to install wordpress in another folder, and work on the theme that way. Name that folder something weird, and password protect it.
